SWEET POTATO PONE

Favorite Christmas food all over the British, French, & Latin Caribbean.

1 lb. raw sweet potatoes (peeled and grated, about 1 2/3 C. packed)
1 C. whole milk
1 C. coconut cream (unsweetened)
1 ¼ C. dark brown sugar
1 tsp. ginger
1 tsp. cinnamon
½ tsp. allspice
2 tsp. vanilla extract
2 T. melted butter
1 C. raisins
1 cup shredded coconut, fresh
(if packaged get unsweetened)
1 mashed banana


1. Preheat oven to 375º
2. In a large bowl, combine grated sweet potatoes, mil, coconut cream, brown sugar, spices, vanilla and banana.
3. Add melted butter, raisins, and coconut & stir well.
4. Taste mixture for sweetness and add more sugar if desired.
5. Pour into greased 3-quart casserole dish. Bake for about 1 hour or until mixture is firm in the middle.
